Beginners Popcorn Balls Recipe

Ingredients
  • 1 1/2 c Milk
  • 4 Eggs
  • 3 3/4 oz Pastry flour -=OR=-
  • 1 pn Salt
  • 3/4 oz - Cake flour
  • 1/2 oz Melted butter
  • 3 oz - All-purpose flour -AND-
  • ---CREPES------

Directions
  • Step #1 --FILLING----- Chives; blanched Caviar Sour cream -(or creme fraiche) Butter; melted mix ALL INGREDIENTS for the crepes, except the butter.
  • Step #2 Whisk well & pass through a fine strainer.
  • Step #3 Let rest 1 hr.
  • Step #4 Add butter before cooking the crepes.
  • Step #5 Cook the crepes & be careful not to brown them.
  • Step #6 Lay the crepe out on a piece of parchment or a clean towel (don't lay out more than 12 at a time or they will dry out).
  • Step #7 Fill with a spoonful of caviar & sour cream.
  • Step #8 Pull the edges of the crepes up to form small purses & tie with a chive.
  • Step #9 Serve warm or at room temperature, lightly brushed with butter.
  • Step #10 These crepes can also be rolled or folded in the more traditional manner if forming the purses seems like a daunting task.
  • Step #11 The result is beautiful, however, and worth the extra effort.
