Beignets (creole Doughnuts) Recipe

Ingredients
  • 1 Egg; beaten
  • 3 c Flour; divided
  • Oil
  • 3/4 c Milk
  • 1 pk Yeast
  • Sugar, confectioners; sifted
  • 1/4 c Sugar
  • 3 tb ;water, warm
  • 1/4 c Shortening
  • 1 ts Salt

Directions
  • Step #1 Proof the yeast.
  • Step #2 Scald the milk; stir in the the sugar, shortening, and salt.
  • Step #3 Cook the mixture to the 105 to 115 degree range.
  • Step #4 Add milk mixture, & 2 c flour to the yeast mixture, egg, mixing well.
  • Step #5 slowly stir in the enough remaining flour to make a soft dough.
  • Step #6 Turn the dough out onto a floured surface, & knead until smooth and elastic (8 to 10 mins).
  • Step #7 place this in a well-greased bowl, turning to grease the top.
  • Step #8 Cover & let rise about 1 hr, or until doubled.
  • Step #9 Punch dough down; turn out onto a lightly floured surface.
  • Step #10 Roll dough into a 12" x 10" rectangle; cut into 2" squares.
  • Step #11 Place on a floured surface; cover & let rise in a warm place 30 mins or until doubled in bulk.
  • Step #12 Heat 3" to 4" of oil to 375 degrees; drop in 3 to 4 beignets at a time.
  • Step #13 Cook 1 min on each side or until golden.
  • Step #14 Drain on paper towels, & Sprinkle top with powdered sugar.
