Mexi-cali Layered Dip Recipe

Ingredients
  • 12 Corn tortillas, divided
  • 1 c Shredded cheddar cheese
  • 1/4 c Parmesan cheese
  • 1 1/2 ts Ground cumin
  • 1/2 ts Garlic salt
  • 1 tb Chili powder
  • 2 Eggs, slightly beaten
  • 16 oz Carton low fat cottage cheese
  • 1 ts Dried oregano
  • 1 lb Ground beef
  • 17 oz Can whole kernel corn, drained
  • 1 c Picante sauce
  • 15 oz Can tomato sauce

Directions
  • Step #1 preheat your trusty oven to 375F.
  • Step #2 Brown meat, drain.
  • Step #3 Add corn, tomato sauce,picante sauce, chili powder, cumin.
  • Step #4 Simmer, stirring frequently, 5 mins.
  • Step #5 mix cottage cheese, parmesan cheese, eggs, oregano & garlic salt.
  • Step #6 Mix well.
  • Step #7 Arrange 6 tortillas on bottom and sides of lightly greased 13x9x2 inch baking dish, overlapping as necessary.
  • Step #8 top this with 1/2 the meat mixture.
  • Step #9 Spoon cheese mixture over meat.
  • Step #10 Arrange remaining 6 tortillas over cheese.
  • Step #11 top this with remaining meat mixture.
  • Step #12 Bake in preheated oven about 30 mins.
  • Step #13 remove this from oven, top this with cheddar cheese.
  • Step #14 let this stand 10 mins before serving.
