Mexican Black Beans Recipe

Ingredients
  • 3 c Romaine lettuce, sliced l/4-inch thick
  • 1 md Onion, cut into thin wedges
  • 1 Clove garlic, crushed
  • 1 ts Each ground cumin & dried oregano leaves, crushed
  • 2 tb Vegetable oil
  • 2 Jalapeno peppers, cut in slivers
  • 1 Red bell pepper, cut in thin strips

Directions
  • Step #1 Partially freeze beef flank steak to firm (approximately 30 mins).
  • Step #2 Cut steak in half lengthwise; cut each half across the grain into ~s-inch thick strips.
  • Step #3 mix oil, cumin, oregano & garlic.
  • Step #4 Heat half of Spice uped oil in large non-stick wok or skillet pan over medium-high heat until hot.
  • Step #5 Add bell pepper, onion & jalaper-lo pepper; stir-fry 2-3 mins or until crisp-tender.
  • Step #6 Remove and reserve.
  • Step #7 Stir-fry beef strips (I/2 at a time) in remaining half of Spice uped oil 2-3 mins.
  • Step #8 Return vegetables & b eef to pan & heat through.
  • Step #9 Serve beef mixture over lettuce.
  • Step #10 Makes 4 servings.
  • Step #11 To reduce the heat of jalapeno peppers, remove membranes & seeds.
  • Step #12 PREP TIME: 15 mins.
  • Step #13 Freezing time: Approximately 30 mins.
