Mexican Coffee Recipe

Ingredients
  • 1 ts Ground cinnamon
  • Powdered sugar
  • 1 1/3 c Brown sugar, packed
  • 1/3 c Cocoa powder
  • Note
  • 1 ts Baking soda
  • 6 lg Egg whites
  • 1/4 ts Almond extract
  • 1 c Cake flour -- sifted
  • 2 ts Vanilla
  • 1 c Plain lowfat yogurt -- see
  • 1 ts Baking powder

Directions
  • Step #1 1.
  • Step #2 In a small bowl mix flour, baking powder, cocoa, baking soda and cinnamon.
  • Step #3 In a large bowl beat egg whites, brown sugar, yogurt, vanilla & almond extract until well mixed.
  • Step #4 stir in the flour mixture & beat until just evenly moistened.
  • Step #5 2.
  • Step #6 Pour batter into an 8 inch square nonstick (or greased regular) baking pan.
  • Step #7 Bake in a 350 degree oven until the center of the cake springs back when lightly pressed (about 30-40 mins).
  • Step #8 Let cake cool in pan on a rack for 15 mins.
  • Step #9 Then invert it onto a serving plate.
  • Step #10 Serve warm or cool.
  • Step #11 If made ahead, wrap cool cake airtight and store this in a cool place until next day (freeze for longer storage).

  • Step #13 Just before serving sift powdered sugar over the cake.
