Ingredients
  • 2 Cloves garlic, minced
  • 1 cn Pinto beans
  • 1 tb Olive oil
  • 1/8 ts Freshly ground black pepper

Directions
  • Step #1 Place olive oil & garlic in 9-inch microwave-proof pie plate.
  • Step #2 Microwave on HIGH (100% power) 45 seconds.
  • Step #3 Drain pinto beans, reserving 1/3 c of juices.
  • Step #4 Add beans and reserved juiced to garlic mixture in microwave-proof pie plate.
  • Step #5 Mash beans with potato masher until all are broken up.
  • Step #6 stir in the pepper.
  • Step #7 Cover with wax paper & microwave on HIGH 3 mins.
  • Step #8 Stir well and smooth out top to make even.
  • Step #9 Makes 2 c.
