Mexican Rice #1 Recipe

Ingredients
  • 1 x WHICH MEANS ADD THEM ONLY IF
  • 1 c RICE
  • 1/2 c CORN, COOKED
  • 1 1/4 c PLAIN YOGURT
  • 1/4 ts SALT
  • 1/3 c CHEDDAR CHEESE, GRATED
  • 2/3 c MONTEREY JACK CHEESE, GRATED
  • 1 ea GREEN PEPPER, sliced
  • 2 c WATER
  • 1 x CORN & OLIVES ARE OPTIONAL
  • 1 x YOU WANT TO.
  • 1/4 c BLACK OLIVES, sliced

Directions
  • Step #1 Place water & salt in a saucepan that has a cover.
  • Step #2 Bring to a boil.
  • Step #3 Add rice & cover.
  • Step #4 Cook over low heat/flame for about 25 mins until done.
  • Step #5 Meanwhile, carefully grate the cheeses and chop the green pepper & olives if you choose to use them.
  • Step #6 If you like corn you can use some frozen corn according to the instructions on the package.
  • Step #7 When the rice is done put it in a serving bowl, mix in the vegetables, the monterey jack cheese and the yogurt.
  • Step #8 Then stir in the the cheddar cheese & cover the bowl for a few mins so the cheese can melt.
