Mexican Rice #3 Recipe

Ingredients
  • Jack cheese
  • 1 1/2 c Uncooked instant rice
  • 1 ts Chili powder
  • Kernel corn with red and
  • 4 oz shredded Monterey
  • 1 can Mexicorn whole
  • 1 jar salsa
  • 1 lb Ground beef
  • Green peppers
  • 1 1/2 c Water

Directions
  • Step #1 Brown ground beef in large skillet; drain.
  • Step #2 stir in the salsa, corn, water & chili powder; bing to a boil.
  • Step #3 stir in the rice.
  • Step #4 Cover; remove from heat.
  • Step #5 let this stand 5 to 7 mins or until liquid is absorbed.
  • Step #6 Fluff mixture with fork; Sprinkle top with cheese.
  • Step #7 Cover, let this stand 2 to 3 mins or until cheese is melted.
  • Step #8 7 (1 c) servings.
