Mexican Spanish Rice Recipe

Ingredients
  • 2 tb Green chili peppers
  • 4 Beaten eggs
  • 19 oz Can tomatoes
  • 1 lb Ground beef
  • 12 oz Cooked spaghetti
  • 1/2 c Shredded Monterey, Jack or Cheddar cheese
  • 1/2 ts Cumin
  • 1/4 c sliced olives
  • 4 tb Butter
  • 6 oz Crushed tortilla chips
  • 19 oz Can red kidney beans
  • 6 oz Can tomato paste
  • 1/4 c Freshly grated parmesan
  • 1/4 ts Sugar
  • 1 ts Chili flakes
  • 1/2 c sliced onion

Directions
  • Step #1 Cook & drain pasta, & let cool slightly.
  • Step #2 stir in the butter, parmesan cheese & eggs.
  • Step #3 Spread into the bottom of a large greased baking dish.
  • Step #4 Brown onion & ground beef.
  • Step #5 stir in the kidney beans, undrained tomatoes & tomato paste.
  • Step #6 Add sliced green chilis, chili flakes, sugar & cumin.
  • Step #7 Let simmer at least 30 mins.
  • Step #8 or longer.
  • Step #9 (You can add some Tabasco Sauce for some extra "kick" at the end.
  • Step #10 ) Pour meat mixture over pasta in baking dish.
  • Step #11 top this with the shredded cheese, olives & tortilla chips.
  • Step #12 Bake in a 350 degree oven for 30-40 mins.
  • Step #13 or until brown.
