Michael Loo's Chicken Kiev Recipe

Ingredients
  • 1 tb Salt
  • 2 tb Minced garlic
  • 4 c Brown stock
  • 1 1/2 lb Lean beef, cut 1/8" cubes
  • 6 tb Chili powder
  • 1 lg Onion, minced
  • 1 Bottle Dos Equis beer or any other kind of beer

Directions
  • Step #1 mix the chili powder & salt in a bowl, pour beer over mix, and set aside.
  • Step #2 Heat 1/4 c of olive oil in a sufficiently-sized saute pan until it smokes.
  • Step #3 Add beef, using a fork to break up any pieces which stick together.
  • Step #4 Cook, strring every once in awhile, over high heat until meat is well sered (but not burnt).
  • Step #5 Add onions & garlic, reduce heat, cook this until onions are translucent.
  • Step #6 If meat has been seared in small batches, add all meat, onions & garlic to a stockpot.
  • Step #7 Add beer/spice mixture to pot.
  • Step #8 cook this until liquid is well reduced (be careful not to scorch).
  • Step #9 After liquid has reduced, add 2 c of stock.
  • Step #10 Bring to a boil, reduce heat, & let simmer uncovered for 2 hrs.
  • Step #11 Use remaining stock to adjust consistency during cooking.
