Michigan Pasties Recipe

Ingredients
  • 1 Clove garlic, peeled and crushed
  • 1 md Onion, peeled & finely sliced
  • 20 fl Chicken Stock
  • 1 tb Olive oil
  • 14 oz Canned sliced Tomatoes
  • 1/4 sm Cabbage, shredded
  • 1 lg Carrot, peeled & finely sliced
  • 4 oz Dried Butter Beans
  • Crusty bread to serve
  • Salt & Pepper
  • 2 oz Streaky Bacon, sliced
  • 2 oz Pepperoni Salami, sliced
  • Bayleaf, Majoram & Fresh Rosemary
  • 1 tb Tomato Puree
  • 2 Sticks celery, finely sliced

Directions
  • Step #1 Soak beans in cold water for 5 hrs, or overnight.
  • Step #2 Drain, put in a saucepan & add enough water to cover.
  • Step #3 Bring to the boil & boil for 10 mins.
  • Step #4 Reduce heat, cover & let simmer for 30-45 mins, until just tender.
  • Step #5 Drain & put to one side.
  • Step #6 Cook bacon in a large pan until crisp.
  • Step #7 Add olive oil, garlic, onion, celery & carrot.
  • Step #8 Cook, carefully, stirring often, for 5 mins.
  • Step #9 Add cabage & salami snf cook for 2 mins.
  • Step #10 Put tomatoes, Spice uping, puree, stock, herbs & cooked beans into pan.
  • Step #11 Bring to the boil, then simmer for 45 min until soft.
  • Step #12 Remove herbs.
  • Step #13 serve this with crusty bread.
