Microwave Caramel Corn Recipe

Ingredients
  • 2 c Applesauce
  • Vegetable cooking spray
  • 1/4 c Wheat germ
  • 1/2 c Raisins
  • 1 c Butterscotch morsels
  • 1/2 c sliced nuts or sunflower seeds
  • 3 c Vanilla wafers

Directions
  • Step #1 From the International Apple Institute 1.
  • Step #2 Spray the bottom of an 8x8" glass pan or a 9" glass pie pan with cooking spray.
  • Step #3 Crush the wafers into large chunks.
  • Step #4 Put half the wafers in the pan.
  • Step #5 2.
  • Step #6 In a bowl, mix the raisins, butterscotch morsels, wheat germ & applesauce.
  • Step #7 Add the nuts or sunflower seeds if desired.
  • Step #8 Spread over the wafers in the pan.
  • Step #9 Press the remainder of the wafers evenly over the applesauce mixture.
  • Step #10 3.
  • Step #11 Microwave for 8 mins.
  • Step #12 Let cool for at least 15 mins before cutting into bars.
  • Step #13 Store any leftovers in the refrigerator.
