Microwave Crunchy Caramel Corn * Recipe

Ingredients
  • 1 1/2 c Sugar
  • 1 ts Vanilla
  • 2 c Miniature marshmallows
  • 12 oz Evaporated milk
  • 12 oz Chocolate chips
  • 1 c sliced nuts
  • 1/4 c Butter or margarine

Directions
  • Step #1 Mix sugar, milk, butter & a dash of salt in a 3 quart microwave safe bowl.
  • Step #2 Cover loosely with wax paper.
  • Step #3 Microcook on high 4 mins.
  • Step #4 Uncover, Microcook 10 mins more, stirring every 3 mins.
  • Step #5 Continue cooking, stirring every 2 mins, until candy thermometer reads 234 to 240 degrees.
  • Step #6 (soft ball stage).
  • Step #7 stir in the marshmallows and chocolate chips & nuts if using.
  • Step #8 Stir vigorously until creamy and slightly glossy.
  • Step #9 Spread in a buttered 11x7 pan.
  • Step #10 put in the fridge 2 hrs or until set.
