Microwave Never-fail Fudge Recipe

Ingredients
  • 1/2 c Frozen peas & carrots - thawed
  • 1/4 c sliced green onions
  • 4 c Cooked rice
  • 1 Egg; beaten
  • 1/2 c Thinly sliced celery
  • 2 ts Low sodium soy sauce
  • 1/2 c Cooked & sliced chicken OR- tofu

Directions
  • Step #1 In a large microwave-safe dish, peas & carrots, mix rice, chicken or tofu, celery, & green onions.
  • Step #2 mix egg & soy sauce; stir in theto rice mixture.
  • Step #3 Cover & microwave on high power for 3 mins; stir well.
  • Step #4 Cover & microwave on high for 2 to 4 more mins.
  • Step #5 Makes 6 servings.
