Mid East Mint Lamb Recipe

Ingredients
  • 8 oz Reg or fat-free sour cream
  • 1 cn Cream of broccoli soup, cond
  • 3 tb Margarine, melted
  • 1 lb Zucchini, sliced
  • 1 ea Medium onion, sliced
  • 2 ea Carrot, grated
  • 1/2 c sliced celery
  • 8 oz Herb Spice uped stuffing mix

Directions
  • Step #1 Preparation time : 15 mins Cooking time : 20 mins mix zucchini & onion in a microwave-safe dish.
  • Step #2 Cover tightly, & cook on HIGH 6 mins or until tender.
  • Step #3 Drain excess moisture.
  • Step #4 Mix carrot, soup, celery, & sour cream with zucchini & onion.
  • Step #5 mix melted margarine & stuffing mix.
  • Step #6 Toss until crumbs are "toasted".
  • Step #7 Using a 4-qt microwave-safe dish (either 13x9x2, layer with half the stuffing mix, all zucchini mix, or casserole), then the remaining stuffing mix.
  • Step #8 Cover.
  • Step #9 Cook 12 mins at 60% power.
  • Step #10 (for a crispy top, mushroom, cook 9 mins covered & 3 mins uncovered) Note : 2 medium carrots = about 1 c grated can use other cream soups (celery, etc) can use either regular or low-fat cream soup.
