Millet Molasses Cookies Recipe

Ingredients
  • 1 c Finely sliced celery
  • 2 tb Sesame oil
  • 1 c Pistachio nuts OR- roasted sunflower seeds
  • 2 ts Sea salt
  • 1 1/2 ts Dill weed
  • 3 tb Gluten flour
  • 3 3/4 c Water
  • 1 ts Dried thyme
  • 1 1/2 c Peeled, finely sliced carrots
  • 1 1/2 c Millet
  • 1 c Finely sliced onions
  • 3 tb Unbleached flour
  • 1 Garlic clove; minced

Directions
  • Step #1 You can serve this versatile loaf for lunch or as an appetizer.
  • Step #2 Place slices on a bed of Bibb lettuce with vegetable garnishes & a light, creamy salad dressing.
  • Step #3 Rinse the millet & put it in a medium saucepan with the water and 1/2 tsp sea salt.
  • Step #4 Cook the millet, covered, over med-heat/flame for about 30 mins or until soft; the millet should absorb all of the water.
  • Step #5 (If the grains are too moist, the loaf will not bind properly.
  • Step #6 ) Saute the carrots, celery, onions, & garlic in oil for 6 mins, or until the onions are translucent.
  • Step #7 Add the Spice upings, including the remaining 1 1/2 tsps of salt.
  • Step #8 Mix the cooked millet & the vegetables together, along with the nuts or seeds, if you wish.
  • Step #9 Mix the two flours together & add them to the millet mixture, mixing it well so the loaf will hold together.
  • Step #10 Lightly oil & flour a large loaf pan.
  • Step #11 Press the millet mixture into the pan & bake in a preheated oven at 400F degrees F for about one hr.
  • Step #12 (If the millet mixture is warm when you put it in the pan, reduce the baking time to about 45 mins.
  • Step #13 ) Allow the loaf to cool for 10 mins, then carefully remove it from the pan.
  • Step #14 To avoid breaking the loaf, you may wish to slice it while it is still in the pan.
