Mimi's Pound Cake Recipe

Ingredients
  • 2 Garlic cloves - finely sliced
  • 1 c Cooked rice
  • 1 Boneless chicken breast - cooked & shredded
  • 1/2 c Fresh cilantro; sliced
  • 1 qt Homemade chicken broth
  • 1/3 c Fresh lime juice 1/4 c Lemon juice
  • Salt & pepper; to taste
  • 1 lg Red bell pepper; sliced
  • 1 tb Vegetable or olive oil
  • 1 c Tomatoes; sliced
  • 1 Onion; sliced

Directions
  • Step #1 --GARNISH----- Fresh cilantro; sliced In large saucepan, heat oil & saute onion, garlic & bell pepper until softened & fragrant - several mins.
  • Step #2 Add the chicken broth; bring to a boil.
  • Step #3 Add the fresh lime or lemon juice, chicken & rice & bring back to a boil.
  • Step #4 Add tomatoes & cilantro, then turn off heat as soon as possible.
  • Step #5 Taste & add salt & pepper if desired.
  • Step #6 Serve as soon as possible with cilantro Sprinkle topd over top as a garnish to each bowl.
  • Step #7 Yield: 4 to 6 servings.
