Mimosa Recipe

Ingredients
  • 1/4 c Sugar
  • 1/2 c - to 2 c water; as needed
  • 2 lb Apples; preferably MacIntosh
  • 1/2 ts Cinnamon
  • 1 ts Vanilla extract
  • Heavy cream as garnish
  • 1 Lemon peel strip; 2 inches

Directions
  • Step #1 1.
  • Step #2 Core & quarter apples, but do not peel.
  • Step #3 Cook with lemon peel in large, heavy-bottomed saucepan with just enough water to cover bottom of pan.
  • Step #4 Cover & let simmer carefully for about 15 mins, or until apple pieces are soft but not quite falling apart.
  • Step #5 If water evaporates, add a little more, but the less the better.
  • Step #6 2.
  • Step #7 Puree apples through food mill or strainer set over clean pot.
  • Step #8 Discard lemon & apple peels.
  • Step #9 Set pot of puree over low heat/flame, and stir in the sugar & cinnamon, but not vanilla.
  • Step #10 Simmer, stirnng frequently, until applesauce is very thick-about 10 mins.
  • Step #11 Adjust flavor, adding vanilla.
  • Step #12 3.
  • Step #13 Serve hot, warm, or cold.
  • Step #14 A trickle of cold sweet cream is a delicious topping, especially on hot applesauce.
