Minced Barbeque Recipe

Ingredients
  • 2 1/2 c Dark or golden raisins --
  • Two 9inch Pyrex pie pans
  • 2 ts Sugar for finishing the top
  • 1 1/4 c Light brown sugar
  • Double batch Sour Cream
  • Egg Wash: 1 egg well beaten
  • Salt
  • 1/2 ts Ground ginger
  • 2/3 c Dark rum or brandy
  • With a pinch
  • 1 ts Ground cinnamon
  • 8 tb Unsalted butter --
  • 2 lb McIntosh apples --
  • 1/4 c Distilled white vinegar
  • 1 ts Freshly grated nutmeg
  • Firm apples
  • 2 Crust pie
  • Dough for a -- above
  • 1/2 c sliced candied orange peel
  • The pies -- optional
  • 2 lb Granny Smith or other tart
  • 2 md Lemons
  • 2 md Oranges
  • 1/2 ts Ground cloves
  • 1 2/3 c Currants

Directions
  • Step #1 To make the filling, peel, halve & core the apples.
  • Step #2 Grate them coarsely by hand or in the food processor/blender.
  • Step #3 Place the grated apples in a large nonreactive saucepan.
  • Step #4 Grate the zest of both the oranges and lemons, then squeeze both fruits & strain the juice & add it with the zest into the pan.
  • Step #5 stir in the the remaining ingredients.
  • Step #6 Bring to a simmer over low heat/flame, stirring every once in awhile.
  • Step #7 Continue cooking for about 45 mins longer, stirring often this scorches easily until the mixture is reduced to a thick, jamlike consistency.
  • Step #8 Let cool.
  • Step #9 Set racks at the middle & lowest levels of the oven & preheat to 400 degrees.
  • Step #10 Divide the double batch of dough into quarters.
  • Step #11 Roll one quarter out to form a bottom crust & arrange in pan.
  • Step #12 Repeat with the second piece.
  • Step #13 Spread half the mincemeat evenly in each crust.
  • Step #14 Form the lattice top crusts.
  • Step #15 Flute the edge of the pies & carefully brush with egg wash.
  • Step #16 If you wish, Sprinkle top the top of each pie with sugar.
  • Step #17 Bake the pies for 15 mins on the bottom rack of the oven.
  • Step #18 Lower the temperature to 350 degrees & move the pies to the middle rack.
  • Step #19 Bake about 20 to 30 mins longer, until the crust is a deep golden & the juices are just beginning to bubble up.
  • Step #20 Cool pies on racks & serve warm or at about room temp.
  • Step #21 Yield: two 9-inch pies.
