Step #1 In a large bowl, mix the first 9 ingredients & mix vigorously with your hands until smooth (5 to 6 mins).
Step #2 Shape into about a dozen meatballs.
Step #3 Thread them onto 4 skewers, alternating with the zucchini & red pepper.
Step #4 Preheat the oven to broil.
Step #5 In a glass jar, lemon juice, mix the olive oil, & the 1 tsp of mint; cover & shake well.
Step #6 Brish the kabobs with the oil mixture & broil 4 inches from heat; turn the kabobs every once in awhile & brish with the remaining oil mixture until meatballs are brown (about 10 to 12 mins).
