Minestrone In Minutes Recipe

Ingredients
  • 1 1/3 c Dried white kidney beans, - soaked
  • Olive oil
  • 1 ea Tomato, peeled, seeded & - sliced
  • 1 lg Garlic clove, minced
  • 1/2 lb Butternut squash, peeled & - sliced
  • 1 1/2 ts Coarse sea salt
  • 2 tb Pesto, see recipe
  • 2 lg Potatoes, sliced
  • 1/3 c Olive oil
  • 1 ea Yellow onion, finely sliced
  • 1 ea Carrot, finely sliced
  • 1/2 lb Tubular pasta
  • 1/3 lb Mushrooms, sliced
  • 3 lg Zucchini, sliced finely
  • 2 ea Celery ribs, finely sliced
  • 8 c Water

Directions
  • Step #1 Drain the beans & mix with the water in a Dutch oven.
  • Step #2 Bring to a boil & cok at a high heat for 10 mins.
  • Step #3 Reduce heat & simmer, covered, for another 5 mins.
  • Step #4 Add the potatoes, tomato & mushrooms & cook over med-heat/flame, squash, zucchini, stirring from time to time.
  • Step #5 After about 15 mins, add the carrot, celery, garlic & onion.
  • Step #6 Simmer for another 15 mins, stirring every once in awhile.
  • Step #7 Add the olive oil & salt.
  • Step #8 Continue simemring, pressing the beans & potatoes against the side of the pot to make the soup dense.
  • Step #9 After another 15 mins cooking, add the pasta & simmer for 9 or 10 mins until it is al dente.
  • Step #10 Just as the heat is turned off, stir in the the pesto.
  • Step #11 Let the soup cool until it is tepid & serve it with drizzles of olive oil on top.
