Mini Calzones Recipe

Ingredients
  • 1/8 ts Pepper
  • 2 ts Olive oil
  • 8 oz Mushrooms, finely sliced
  • 3 tb Dry red wine
  • 6 Phyllo dough sheets - defrosted
  • 3 tb Finely sliced green onions
  • 1/4 ts Salt
  • 1/4 ts Dried thyme leaves
  • Vegetable cooking spray
  • 4 Beef Tenderloin Steaks - cut 1" thick

Directions
  • Step #1 Heat oven to 425F degrees F.
  • Step #2 In large non-stick skillet, heat oil over med-high heat.
  • Step #3 Add mushrooms; stir until tender.
  • Step #4 Add wine; cook 2-3 min.
  • Step #5 stir in the green onions, thyme, salt & pepper.
  • Step #6 remove this from skillet; cool.
  • Step #7 Place steaks in skillet; cook 3 mins over med-high heat, turning once.
  • Step #8 (Steaks will be partially cooked.
  • Step #9 Do not overcook.
  • Step #10 ) Spice up this with salt & pepper as desired.
  • Step #11 On flat surface, layer phyllo dough, spraying each sheet thoroughly with cooking spray.
  • Step #12 Cut stacked layers to make 4 equal squares.
  • Step #13 Place about 2 Tbsp.
  • Step #14 of mushroom mixture in center of phyllo squares.
  • Step #15 Place steaks on mushroom mixture.
  • Step #16 Bring together all 4 corners of phyllo dough; twist tightly to close.
  • Step #17 Lightly spray each with cooking spray; place on greased baking sheet.
  • Step #18 as soon as possible bake in preheated over 9-10 min.
  • Step #19 or until golden brown.
  • Step #20 let this stand 5 min.
  • Step #21 Serve as soon as possible.
  • Step #22 Serving Suggestion: Twice Baked Potatoes & Sauteed Asparagus with Red Bell Pepper Strips.
