Mint-glazed Carrots & Snow Peas Recipe

Ingredients
  • Salt & pepper; to taste
  • 1 lb Carrots; sliced thin
  • 1 ts Lemon juice
  • 2 ts Fresh mint; sliced
  • 2 tb Butter or margarine
  • 1/3 c Chicken broth
  • 1 1/2 tb Sugar

Directions
  • Step #1 In a small saucepan, steam carrots over boiling water until just tender-crisp.
  • Step #2 Drain.
  • Step #3 Heat butter in a deep skillet.
  • Step #4 Add carrots, lemon juice & sugar.
  • Step #5 Cook over med-heat/flame, shaking the pan until carrots are coated.
  • Step #6 Add chicken broth & continue cooking slowly until liquid is evaporated & carrots are light golden.
  • Step #7 Add salt & pepper to taste.
  • Step #8 Add mint & mix in well.
  • Step #9 Serve as soon as possible.
