  • Step #1 3 chayotes, 3/4 to 1 lb : each 3/4 lb shrimp -- raw, in shells 4 TB butter 1 c onion -- finely sliced 1 ts garlic -- finely minced 2 TB flour 1 c milk 2 ts grated ginger root -- : optional 1/4 c scallions -- finely sliced 1 egg yolk : Freshly ground black pepper : to taste 1/2 c fresh bread crumbs -- finely : minced 1/4 c sliced parsley 1/2 c grated Cheddar cheese mins (par-boil 10; prep 10; bake 20) - Split the chayotes lengthwise in half.
  • Step #2 Put in a kettle of cold water with= salt to taste.
  • Step #3 Bring to the boil & let simmer about 10 mins.
  • Step #4 Do not= overcook or the vegetable will become mushy.
  • Step #5 Drain & run briefly under= cold water.
  • Step #6 Drain again.
  • Step #7 Using a spoon, scoop out the flesh & seeds of= each half, leaving a shell about 1/8-inch thick or slightly thicker.
  • Step #8 Set= the shells aside.
  • Step #9 Chop flesh & seeds fine.
  • Step #10 There should be about 1 c.
  • Step #11 - Peel & devein the shrimp & chop coarsely.
  • Step #12 There should be about 1 1/4= c.
  • Step #13 Set aside.
  • Step #14 - When ready to cook, PREHEAT the oven to 425F degrees.
  • Step #15 Melt half the butter= in a saucepan & add the onion & garlic.
  • Step #16 Cook, stirring, until wilted.
  • Step #17 = Sprinkle top with flour & stir this to distribute evenly.
  • Step #18 Add the milk, stirring= rapidly with a wire whisk.
  • Step #19 When the sauce is thickened and smooth, add the= sliced pulp.
  • Step #20 Bring to a boil, stirring, & add the ginger & scallions.
  • Step #21 = remove this from the heat & stir in the the egg yolk.
  • Step #22 let this stand to room= temperature.
  • Step #23 stir in the the shrimp, pepper, salt, 1/4 c of the bread crumbs= & the parsley.
  • Step #24 Use the mixture to stuff chayote halves.
  • Step #25 Pile up and= smooth over.
  • Step #26 - mix the remaining 1/4 c of bread crumbs & cheese.
  • Step #27 Sprinkle top the tops= with the mixture, patting to help it adhere.
  • Step #28 Dot with the remaining 2= tbsps butter.
  • Step #29 Arrange the stuffed halves in a lightly buttered baking= dish & bake for 20 mins.
