  • Step #1 2 TB salt 1/4 c sugar 2 TB cumin -- ground 2 TB pepper 2 TB chili powder 4 TB paprika 2 full pork racks : Basting Sauce : BASTING SAUCE 1 3/4 c vinegar 2 TB hot pepper sauce 2 TB sugar 1 TB salt 1 TB fresh ground pepper mix salt, sugar, pepper, cumin, chili & paprika tomake bbq rub.
  • Step #2 Rub thoroughly with mixture.
  • Step #3 Place ribs on baking sheets & cook in 180x oven 3 hrs.
  • Step #4 Do not turn, slow cooking infuses spices.
  • Step #5 Remove from oven.
  • Step #6 (Ribs may be covered & put in the fridged up to 2 day before grilling.
  • Step #7 ) Use very low charcoal fire with rack set as high as possible.
  • Step #8 Grill ribs 5 to 30 min.
  • Step #9 per side depending on heat & temperature of ribs.
  • Step #10 Ribs should have light outer crust & be heated throughout.
  • Step #11 (longer cooking produces better ribs) If you prefer juicy ribs, coat with basting sauce just before removing from grill.
  • Step #12 Otherwise serve dry with sauce on the side.
  • Step #13 remove this from grill cut into serving size and serve.
  • Step #14 Basting sauce : mix all ingredients in a bowl.
  • Step #15 Recipe is easily halved or doubled.
  • Step #16 keep 2:1 proportion of sauce to rud.
