Mixed Vegetable Casserole Recipe

Ingredients
  • 2 Tomatoes,large,sliced
  • 2 Garlic cloves,crushed
  • 1/2 pk Frozen veggies del sol
  • 1/3 c Vegetable or olive oil
  • 1/2 ts Paprika
  • Butter or margarine
  • 1 tb Edam cheese,grated
  • 1 lb Frankfurters,skinless

Directions
  • Step #1 1.
  • Step #2 Cook vegetables according to package directions; drain & spread evenly in a 9-inch square baking dish.
  • Step #3 Set aside.
  • Step #4  2.
  • Step #5 mix oil, tomatoes, garlic & paprika is a saucepan; cook 20 mins.
  • Step #6  3.
  • Step #7 Pour over vegetables; Sprinkle top with grated cheese.
  • Step #8  4.
  • Step #9 Dot with butter; lay sliced frankfurters on top.
  • Step #10  5.
  • Step #11 Bake in preheated 400'F.
  • Step #12 oven 15 mins, or until top is browned & cheese completely melted.
  • Step #13  NOTE: Vegetables del sol contains broccoli, carrots & cauliflower.
  • Step #14 Frankfurters can either be beef or turkey.
