Mixed Vegetable Salad Recipe

Ingredients
  • 2 Med onions; thinly sliced
  • 2 Cloves
  • 1/4 ts Fresh ground black pepper
  • 1/2 c Green beans; in 1" pieces
  • 1 1" piece of cinnamon stick
  • 1/2 c Cauliflower pieces
  • 1 Bay leaf; crumbled
  • 1/2 c Green peas
  • 2 ts Salt
  • 8 tb Clarified butter
  • 2 Med tomatoes; peeled & 1/4'd
  • 1/2 c Carrot; thinly sliced
  • 1 1/2 c Long grain rice
  • 2 Whole cardamom pods
  • 3 c Water

Directions
  • Step #1 Note: Cardamon pods should be lighly cracked.
  • Step #2 Heat 2 TBSP ghee and brown the onions.
  • Step #3 Reserve for garnishing.
  • Step #4 Add 3 TBSP ghee to a pan.
  • Step #5 Put in tomatoes, green beans, peas, cauliflower, & carrots.
  • Step #6 Saute for 5 mins.
  • Step #7 Remove & set aside.
  • Step #8 In the remaining 3 TBSP ghee, cloves, carefully fry cardamoms, bay leaf, cinnamon, & pepper for 2 mins.
  • Step #9 Add the raw rice & fry for another 2 or 3 min.
  • Step #10 Bring the water to a boil & add the salt.
  • Step #11 Put in the rice & the vegetables.
  • Step #12 Stir well.
  • Step #13 Cover & cook over low heat/flame for about 20 mins or until the rice is done.
  • Step #14 Garnish with the onions & serve hot.
