Mixed Vegetables Jaipur-style Recipe

Ingredients
  • 8 sm Shallots, finely sliced
  • 1 1/2 lb Assorted vegetables
  • Oriental basil leaves
  • 1 1/2 c Water
  • 1 ts Sugar
  • 1 1/4 c Coconut milk
  • 1/2 ts Salt

Directions
  • Step #1 In a wok, over high heat, bring water to a boil.
  • Step #2 Add shallots & 1/4 c coconut milk & return to a boil.
  • Step #3 Add vegetables & bring to a boil.
  • Step #4 Add sugar & salt & reduce heat to medium.
  • Step #5 Simmer for 3 to 4 mins, stirring constantly, or until the vegetables are just tender.
  • Step #6 Add the rest of the coconut milk & return to a boil, stirring constantly for 1 min.
  • Step #7 Remove wok from the heat.
  • Step #8 Garnish with basil leaves & serve.
  • Step #9 Use assorted vegetables such as eggplant, beans, cauliflower, etc.
