Ingredients
8 sm Shallots, finely sliced
1 1/2 lb Assorted vegetables
Oriental basil leaves
1 1/2 c Water
1 ts Sugar
1 1/4 c Coconut milk
1/2 ts Salt
Directions
Step #1 In a wok, over high heat, bring water to a boil.
Step #2 Add shallots & 1/4 c coconut milk & return to a boil.
Step #3 Add vegetables & bring to a boil.
Step #4 Add sugar & salt & reduce heat to medium.
Step #5 Simmer for 3 to 4 mins, stirring constantly, or until the vegetables are just tender.
Step #6 Add the rest of the coconut milk & return to a boil, stirring constantly for 1 min.
Step #7 Remove wok from the heat.
Step #8 Garnish with basil leaves & serve.
Step #9 Use assorted vegetables such as eggplant, beans, cauliflower, etc.
