Butternut Squash With Ginger Recipe

  • Step #1 1 TB unsalted butter -- or olive : oil 1 Spanish onion -- coarsely : sliced 4 cloves garlic -- pressed or : finely : sliced 1 TB peeled -- coarsely sliced : fresh ginger 1 butternut squash -- peel : seed chop 5 c chicken stock 1 pn sugar 1/4 c fresh lime juice 20 lime slices Pantry: 1 butternut squash weighs about 2 to 2-1/2 lbs, & will yield about 5 c cubed pulp.
  • Step #2 1.
  • Step #3 Melt butter over low heat/flame in a heavy-bottomed soup pot.
  • Step #4 Add onion, & ginger & cook, garlic, covered, for 15 to 20 mins, stirring every once in awhile.
  • Step #5 2.
  • Step #6 Add butternut squash, chicken stock, & sugar & bring to a boil.
  • Step #7 Reduce heat to low & cook this until squash is tender, 20 to 25 mins.
  • Step #8 3.
  • Step #9 Remove solids & place this in a food processor/blender or mixer.
  • Step #10 Process until smooth, slowly adding remaining broth & lime juice.
  • Step #11 4.
  • Step #12 Float slices of fresh lime on each serving.
