C/p Applesauce Cake Recipe

Ingredients
  • 3 ea Green peppers, 3/8" pieces
  • 1/4 c Finely sliced celery
  • 1 tb Ground cumin
  • 1 1/2 qt Water
  • 5 lb Ctr cut pork chops , thin
  • 4 ts Salt
  • 6 ea Long green chiles
  • 1 x Juice of lime
  • 1 c Beer
  • 5 tb Chili powder
  • 1/2 lb Beef suet
  • 3 lb Chicken
  • 1 ts Oregano
  • 1 ts Thyme
  • 1/2 ts MSG
  • 1 lb Jack cheese, shredded
  • 1 tb Pepper
  • 1 ts Cilantro
  • 3 ea Medium onions, 1/2" pieces
  • 4 lb Flank steak
  • 2 ea Cloves garlic, finely choppe
  • 7 c Peeled, chopper tomatoes
  • 2 ts Sugar

Directions
  • Step #1 Cut chicken into pieces & mix with water in large saucepan.
  • Step #2 Simmer 2 hrs then strain off broth.
  • Step #3 In 2 qt saucepan mix celery, tomatoes & sugar & let simmer1 1/2 hrs.
  • Step #4 Boil chiles 15 min until tender, remove seeds & cut in 1/4 in squares.
  • Step #5 Mix oregano,pepper, chili powder, cumin, MSG, salt, cilantro and thyme with beer until all lumps are dissolved.
  • Step #6 Add tomato mixture, chiles, beer mixture & garlic to chicken broth.
  • Step #7 Melt suet to make 6-8 T droppings.
  • Step #8 Pour 1/3 of suet drippings into skillet, add 1/2 pork chops & brown.
  • Step #9 Repeat for remaining pork chops.
  • Step #10 Add pork to broth mixture & cook slowly 30 min.
  • Step #11 Trim all fat from flank steak & cut into 3/8 cubes.
  • Step #12 Brown flank steak in remaining drippings about 1/3 at a time.
  • Step #13 Add to pork mixture.
  • Step #14 Return to simmer & cook slowly about 1 hr.
  • Step #15 Add onions & green peppers, simmer 2-3 hrs longer, stirring with wooden spoon every 15-20 min.
  • Step #16 Cool 1 hr then put in the fridge 24 hrs.
  • Step #17 Reheat chili before serving.
  • Step #18 About 5 mins before serving time, add cheese.
  • Step #19 Just before serving, add lime juice & stir with wooden spoon.
  • Step #20 Serves 12.
