Cabbage Fruit Salad With Sour Cream Dressing Recipe

Ingredients
  • 1 ts Cornflour
  • 3 oz Carrots, parboiled and finely sliced
  • 1 tb sliced parsley
  • Pinch of pepper
  • 12 oz Peeled cooked shrimps
  • A few drops of sesame oil
  • --FILLING-----
  • 1/2 ts Salt
  • 1/2 ts Sugar

Directions
  • Step #1 ---DOUGH------ 5 oz Strong white flou L/2 oz cornf lour 4 ts Salt 7 fl Boiling water 4 oz Lard A few drops of green food -colouring First make the filling.
  • Step #2 Roughly chop the shrimps.
  • Step #3 Add the salt, sugar, pepper & cornflour.
  • Step #4 stir in the the carrots, sesame oil & parsley; mix to bind the ingredients together.
  • Step #5 Chill for 30 mins.
  • Step #6 For the dough, sift the flour, cornfiour & salt into a large bowl.
  • Step #7 Pour in the boiling water & stir quickly, then knead the mixture with the lard on to a lightly floured surface until smooth.
  • Step #8 Roll the dough into cylinder, then cut it into 40 equal portions.
  • Step #9 Flatten a portion of dough, then roll it out thinly to give a round or oval shape.
  • Step #10 Put a little filling in the mlddle, then enclose lt in the dough, pressineg the edges together to make a three-sided seam.
  • Step #11 Some of the dumplings can be folded in half & the edges pinched into a frilly pattern.
  • Step #12 Alternatively, the top of the dumplings can be left.
  • Step #13 Brush the very edge of the pastry with a little food colouring.
  • Step #14 Continue until all the dough & filling is used.
  • Step #15 Arrange the dumplings in a greased steamer & let simmer & cook over boiling water for 8 mins.
  • Step #16 Serve at once.
