Step #1 ---DOUGH------ 5 oz Strong white flou L/2 oz cornf lour 4 ts Salt 7 fl Boiling water 4 oz Lard A few drops of green food -colouring First make the filling.
Step #2 Roughly chop the shrimps.
Step #3 Add the salt, sugar, pepper & cornflour.
Step #4 stir in the the carrots, sesame oil & parsley; mix to bind the ingredients together.
Step #5 Chill for 30 mins.
Step #6 For the dough, sift the flour, cornfiour & salt into a large bowl.
Step #7 Pour in the boiling water & stir quickly, then knead the mixture with the lard on to a lightly floured surface until smooth.
Step #8 Roll the dough into cylinder, then cut it into 40 equal portions.
Step #9 Flatten a portion of dough, then roll it out thinly to give a round or oval shape.
Step #10 Put a little filling in the mlddle, then enclose lt in the dough, pressineg the edges together to make a three-sided seam.
Step #11 Some of the dumplings can be folded in half & the edges pinched into a frilly pattern.
Step #12 Alternatively, the top of the dumplings can be left.
Step #13 Brush the very edge of the pastry with a little food colouring.
Step #14 Continue until all the dough & filling is used.
Step #15 Arrange the dumplings in a greased steamer & let simmer & cook over boiling water for 8 mins.
Step #16 Serve at once.
