Cajun Cashews Recipe

Ingredients
  • 1/2 lb Mozzarella cheese; shred
  • TOPPING
  • 1/4 c Shallots; slice thin
  • 1 ts Fresh ground white pepper
  • 4 tb Olive oil
  • 1 lb Link Italian sausage; cut small pieces
  • 2 sm Cans tomato paste
  • 2/3 c Romano cheese; grated
  • 1 ts Tabasco
  • 1/2 c Red wine
  • 1/4 lb Crabmeat
  • 1/4 lb Crawfish tails; cut small pieces
  • 1/4 c Parmesan cheese; grated
  • 1/8 c Garlic; sliced
  • 1/4 lb Mozzarella cheese; shred
  • 1 lg Link boudin sausage; chop small pieces
  • SAUCE
  • 1/4 c Onion; sliced
  • 1/2 c Butter
  • 28 Canneloni shells
  • 2 Jalapeno peppers; sliced
  • 4 Eggs
  • 1 lb Ricotta cheese
  • 1/4 c Mushrooms; sliced
  • 1/2 c Parmesan cheese; grated
  • 3 c Tomato sauce

Directions
  • Step #1 Begin 2 hrs ahead.
  • Step #2 Prepare sauce: Melt butter, mix with olive oil.
  • Step #3 Add peppercorns, onion, garlic.
  • Step #4 Saute several miniutes.
  • Step #5 Add mushrooms; saute several mins more.
  • Step #6 Add tomato sauce & paste.
  • Step #7 Simmer 1 hr or more.
  • Step #8 Cook sausages well in pan; add jalapenos and Tabasco.
  • Step #9 Add crawfish & saute 5 mins more.
  • Step #10 Add crab; saute a few more mins.
  • Step #11 mix Romano, Parmesan & mozzarella in mixing bowl with ricotta.
  • Step #12 Add sausage, crab, crawfish mixture.
  • Step #13 Add eggs; mix thoroughly.
  • Step #14 --.
  • Step #15 Cook canneloni in rapidly boiling water 7 to 10 mins or until shells are cooked but firm.
  • Step #16 Remove shells from water and stuff with mixture when cool to the touch.
  • Step #17 Arrange shells in large greased baking pan.
  • Step #18 Cover with sauce.
  • Step #19 Slice remaining mozzarella and arrange on top.
  • Step #20 top this with grated Parmesan.
  • Step #21 Bake 40 mins at 350~.
  • Step #22 Put under broiler for last 5 mins to brown cheese topping.
