Cajun Catfish With Spicy Strawberry Sauce Recipe

Ingredients
  • 1/3 c Fresh Horseradish
  • 1/3 c Creole Mustard
  • 1 c Nonfat Mayonnaise
  • 4 dr Tabasco
  • 1 qt Water
  • 1 tb Onion; grated
  • 1 tb Worcestershire Sauce
  • 1 tb Lemon Juice
  • 2 Bay Leaves
  • 2 Beefsteak Tomatoes; cut into wedges
  • 1 Head Butter Lettuce; torn into bite-sized pieces
  • 2 ts Old Bay Spice uping
  • 1/2 ts Cayenne Pepper
  • Parsley
  • 8 Catfish Fillets

Directions
  • Step #1 Mix first seven ingredients in a glass jar; cover & put in the fridge overnight.
  • Step #2 Cut catfish fillets into bite-sized pieces.
  • Step #3 Bring water, bay leaves, Old Bay Spice uping, & cayenne pepper to a gentle simmer & add catfish fillets.
  • Step #4 cook this until the meat flakes, about 10 mins.
  • Step #5 remove this from heat, cover & let the fish cool in the cooking liquid.
  • Step #6 put in the fridge until serving time.
  • Step #7 To serve, drain the catfish fillets & place them on a lettuce-lined platter.
  • Step #8 Place the remoulade sauce in a bowl & nestle it in the center of the serving platter & serve.
  • Step #9 Garnish with tomato wedges & parsley.
