Cajun Chicken Nuggets Recipe

Ingredients
  • 12 tb Unsalted butter
  • 1/2 ts Cayenne pepper
  • 1 1/2 c Flour, all-purpose
  • 4 Whole chicken breasts
  • 1 c Pecans -- sliced
  • Salt -- to taste
  • Without skin -- boned
  • 1 ts Dried thyme
  • 2 ts Ground cumin
  • 1 tb Dried oregano

Directions
  • Step #1 mix the flour, pecans, cumin, oregano, thyme, cayenne, & salt to taste in a shallow dish.
  • Step #2 Melt 6 tbsps of the butter in a small saucepan.
  • Step #3 Dip each chicken piece first in the butter, then in the flour mixture to coat well.
  • Step #4 Melt 3 tbsps of the remaining butter in a large skillet over med-heat/flame.
  • Step #5 Add half the chicken pieces & saute until browned on all sides & cooked through.
  • Step #6 remove this from the pan & keep warm.
  • Step #7 Repeat with the remaining 3 tbsps of butter & the chicken.
  • Step #8 Serve the chicken morsels with toothpicks & your favorite mustard for dipping.
