Cajun Crabmeat Mold Recipe

Ingredients
  • 1 Stalk celery, thinly sliced
  • 1 lg Green pepper, sliced
  • 1 lg Onion, sliced
  • 1/2 lb Frozen peeled shrimp
  • 1 cn whole tomatoes in juice, sliced, well drained
  • 1/4 ts Each dried oregano and thyme leaves
  • 1/2 lb Kielbasa sausage , cut into chunks
  • 1/2 To 1 tsp Tabasco pepper sauce
  • 1 cn tomato sauce sliced parsley
  • 1 tb Vegetable oil
  • 3 c Idaho frozen hash brown potatoes
  • 1 Clove garlic, minced

Directions
  • Step #1 In 3-quart microwave-safe casserole mix oil, green pepper, onion, celery, garlic, oregano & thyme Cover loosely with plastic wrap; cook on High 6 to 8 mins or until just tender, Tabasco sauce, stirring once.
  • Step #2 stir in the potatoes, shrimp, kielbasa, sliced tomatoes & tomato sauce.
  • Step #3 Re-cover; cook on High 10 to 12 mins or until shrimp is cooked, stirring once.
  • Step #4 Garnish with parsley.
  • Step #5 Makes 4 servings.
