Ingredients

  • 2 tb Red Wine Vinegar
  • 1 tb Cornstarch
  • 1 c Vegetable Juice Cocktail
  • 2 tb sliced Green Bell Pepper
  • 2 tb sliced Celery
  • 2 ts Hot Sauce
  • 2 tb sliced Onion
  • 4 c Hot, Cooked Regular Rice
  • 1 cl Garlic
  • 4 Skinned Drumsticks

Directions
  • Step #1 mix Vegetable Juice, Hot Sauce, Oregano, Vinegar, Minced Garlic in A Large Shallow Container; Stir Well.
  • Step #2 Add Chicken, Turning Once To Coat.
  • Step #3 Marinate in Refrigerator 30 Min.
  • Step #4 remove this from Marinade, Reserving Marinade.
  • Step #5 Place Chicken On Microwave Glass Platter; Cover With Plastic Wrap, Turning Back 1 Corner To Vent.
  • Step #6 Microwave At High 8 To 10 Min.
  • Step #7 OR Until Chicken Is Done, Giving Dish A Quarter-Turn At 2 Min.
  • Step #8 Intervals.
  • Step #9 Let Chicken Stand, Covered, 5 Min.
  • Step #10 mix Celery, Pepper & Onion in A 1-Quart Glass Measure; Microwave At High 3-4 Min.
  • Step #11 OR Until Vegetables Are Tender.
  • Step #12 mix Reserved Marinade & Cornstarch, Stirring Until Smooth.
  • Step #13 Add To Vegetable Mixture & Micro- Wave Uncovered At High 1-2 Min.
  • Step #14 OR Until Thickened.
  • Step #15 Serve Chicken Overrice; top this with Sauce.
