Cajun Tostada With Tomato Cumin Dressing Recipe

Ingredients
  • 1 md Red bell pepper, finely sliced
  • 2 1/2 ts Black pepper
  • 1 md Green bell pepper, finely sliced
  • 1 Gallon water
  • 2 ts Salt
  • 1 lg White onion finely sliced
  • 4 Cans tomato sauce
  • 2 ts Garlic salt
  • 1/2 c Finely sliced green onion tops
  • 2 lb Firm tofu drained & cut into 3/4" cubes
  • 2 tb Worcestershire sauce
  • 2 tb Finely sliced parsley
  • 3 ts Paprika
  • 1 c sliced celery
  • 2 1/2 ts Red pepper
  • 2 Cans cooked/peeled tomatoes

Directions
  • Step #1 Fry in very hot olive or peanut oil to seal.

  • Step #6 Pour oil from above into bottom of stock pot, adding enough to cover the bottom of the pot, if necessary.
  • Step #7 Make a roux by adding an equal amount of flour, cooking until thickened.
  • Step #8 Add the following: Simmer for 25 mins.
  • Step #9 Add drained tofu, place lid on pot & let simmer for another 30 mins, stirring every once in awhile.
  • Step #10 Add 3 or 4 fresh bay leaves & let cool for 15 mins.
  • Step #11 Reheat if necessary & serve over steamed rice.
  • Step #12 top this with fresh parsley.
  • Step #13 If a less spicy mix is desired, the amount of red pepper can be reduced to taste.
