Cake With Berries & Whipped Cream Recipe

Ingredients
  • 5 Eggs, beaten
  • 350 g Yellow sultanas
  • 150 ml Brandy
  • 225 g Currants
  • 225 g Unbleached plain flour
  • 225 g Soft brown sugar
  • 100 g Candied peel, sliced
  • 1 ts Cinnamon
  • 1 ts Nutmeg
  • 1 ts Mace
  • 225 g Unsalted butter
  • Grated rind of 1 orange and 1 lemon
  • 225 g Raisins

Directions
  • Step #1 for a richer flavour soak the sultanas in brandy in advance & then substitute half the brandy in the recipe for orange juice.

  • Step #3 A few hrs before starting, pour brandy over fruit & leave covered.

  • Step #5 Double line a round deep 23cm cake tin with thick paper & non-stick parchment.

  • Step #7 Sift the flour & add the spices.
  • Step #8 4.
  • Step #9 Beat together the butter, sugar & grated rinds until light & then add the egg little by little until, adding a little flour towards the end.
  • Step #10 5.
  • Step #11 Fold in the rest of the flour & then add the fruit 6.
  • Step #12 Spoon into the tin & smooth the top.
  • Step #13 (the mixture will be quite stiff).
  • Step #14 7.
  • Step #15 bake this at 170C for about 2 hrs 30 mins.
  • Step #16 Test with a skewer.
  • Step #17 8.
  • Step #18 Leave in tin to cool for 30 mins & then turn onto a cooling rack.
