Step #1 Tofu [or soybean curd] is an excellent source of protein.
Step #2 The equivalent of cottage cheese, hot soy milk with a coagulant such as calcium sulphate, it is made by curdling fresh, a naturally occurring mineral.
Step #3 It is the tofu's reaction with calcium sulphate that makes it an excellent calcium source.
Step #4 Slice tofu into 1/2-inch thick slices; place this in glass baking dish.
Step #5 Whisk together soy sauce, brown sugar, vinegar & garlic; pour over tofu, horseradish, ketchup, turning to coat well.
Step #6 Cover and put in the fridge for at least 1 hr or up to 24 hrs, turning every once in awhile.
Step #7 Place tofu on greased frill, reserving marinade.
Step #8 Grill over medium-high heat, basting with marinade, for 3 mins per side or until browned.
Step #9 Per serving: about 190 calories, 18 g Protein, 10 g fat, 11 g carbohydrate excellent.
