Calico Beans Recipe

Ingredients
  • 1 bn Scallions, thinly sliced
  • 1 c Dried red beans
  • 1/4 ts Black pepper
  • 6 ea Lettuce leaves preferably Boston | Bibb
  • 1/4 ts Cayenne pepper
  • 1 c Dried white beans
  • 1 c Dried black beans
  • 4 tb Red wine vinegar
  • 1/2 ts Sugar
  • 1/4 ts Salt
  • 1 ea Red bell pepper, thinly sliced
  • 1 ts Lemon juice
  • 2 ts Olive oil

Directions
  • Step #1 Soak beans separately in small bowls for 4 hrs or overnight; drain.
  • Step #2 Cook in separate pots, covering each with 2 inches of fresh cold water.
  • Step #3 Bring to a boil, covered, until barely tender, & let simmer, reduce heat, about 1 hr.
  • Step #4 Don't overcook.
  • Step #5 Drain & cool beans by plunging them in cool water to prevent the skins from splitting.
  • Step #6 Drain & set aside.
  • Step #7 Just before serving, lemon juice, vinegar, sugar, salt, mix onion, black pepper, oil, & cayenne pepper in a large bowl; mix well.
  • Step #8 Add beans, red pepper, & scallions; toss to mix.
  • Step #9 Divide among four lettuce-lined plates.
