Calico Potato Salad Recipe

Ingredients
  • 1 md Head of Cauliflower, broken into florets
  • 1 c Salt
  • 2 c Sugar
  • 2 tb Dried Whole Black Peppercorns
  • 2 c Celery, 1 inch slices
  • 4 c Cucumbers, 1 inch slices
  • 2 1/2 c Carrots, 1 inch slices.
  • 2 c Onions, 1 inch cubes
  • 1 c Green Pepper, 1 inch cubes
  • 1/4 c Mustard Seed
  • 2 c Sweet Red Pepper, 1 inch cubes
  • 2 tb Celery Seed
  • 6 1/2 c Vinegar
  • 4 qt Cold Water
  • 1 tb Dried Cilantro

Directions
  • Step #1 mix vegetables in a large bowl.
  • Step #2 Dissolve salt in water & pour over vegetables.
  • Step #3 Soak for 15 to 18 hrs in a cool place.
  • Step #4 Drain.
  • Step #5 In a large kettle, spices, mix sugar, & vinegar.
  • Step #6 Bring to a boil and boil for 3 to 4 mins.
  • Step #7 Add vegetables & let simmer 5 to 7 mins.
  • Step #8 Pack hot into eight pint jars, leaving 1/4 inch headspace.
  • Step #9 Remove air bubbles.
  • Step #10 Adjust caps; process 15 mins in boiling water bath.
  • Step #11 Yield: 8 pints.
