Ingredients
  • 1 c Shredded carrot
  • 1 tb Sugar
  • 1 ts Salt, optional Dash hot pepper sauce SALAD:
  • 1 1/2 c Cooked whole kernel corn
  • 1/4 c Vinegar
  • 1/2 c sliced green pepper
  • 1/2 c Olive oil
  • 1/2 c Sliced pitted ripe olives
  • 1/2 c sliced red onion
  • 1/2 c sliced sweet red pepper
  • 4 lg Red potatoes , peeled and cooked
  • 1 1/2 ts Chili powder

Directions
  • Step #1 This tasty dish uses less sugar, salt & fat.

  • Step #3 In a small bowl or jar, mix all dressing ingredients; cover and chill.
  • Step #4 Cube potatoes; mix with corn, onion, carrot, peppers and olives in a salad bowl.
  • Step #5 Pour dressing over; toss lightly.
  • Step #6 Cover and chill.
  • Step #7 Yield: 14 servings.
  • Step #8 Diabetic Exchanges: One serving (without added salt) equals 1-1/2 fat, 17 gm carbohydrate, 0 cholesterol, 146 calories, 2 gm protein, 212 mg sodium, 1 starch; also, 9 gm fat.
