Calico Squash Casserole - Sl 12/90 Recipe

Ingredients
  • 1 c Herb-Spice uped stuffing mix
  • 1/2 ts Salt
  • 1/2 c Plain low-fat yogurt
  • 1/4 c Pimiento; sliced
  • 1/4 ts Pepper
  • 1 lg Carrot; grated
  • 1/2 lb Zucchini; sliced
  • 1 c ;water
  • 1/2 c Onion; sliced
  • 1 ea 10-3/4 oz cream of chicken soup; undiluted
  • 1 lb Yellow squash; sliced
  • 1/4 c Green pepper; sliced
  • 1 ea 8 oz can water chestnuts; drained & sliced
  • 3 tb Green onion; sliced
  • 1/4 c Butter or margarine; melted and divided

Directions
  • Step #1 : mix first 3 ingredients in a medium saucepan; bring to a boil.
  • Step #2 Cover, reduce heat, & let simmer 8 mins or until squash is just tender.
  • Step #3 Drain & set aside.
  • Step #4 : Saute onion, green pepper, & green onions in 1 tbsp butter until tender; set aside.
  • Step #5 : mix stuffing mix & remaining 3 tbsps butter in a large bowl; reserve 1/3 c mixture.
  • Step #6 : mix squash mixture, onion mixture, soup, & remaining ingredients; spoon mixture into a lightly greased 12" x 8" x 2" baking dish.
  • Step #7 Sprinkle top with reserved stuffing mixture.
  • Step #8 bake this at 350F for 30 mins or until casserole is thoroughly heated.
  • Step #9 Yield: 6 to 8 servings.
