California Fruit Terrine Recipe

Ingredients
  • 1/2 c Golden raisins
  • 1/4 ts Salt
  • 2 sm very ripe bananas
  • 2 tb Lowfat soy flour
  • 1/2 ts Baking soda
  • 2 c Whole wheat flour
  • 1/2 c sliced, pitted dried apricots
  • 1 8-oz can crushed pineapple, juice packed
  • 2 Egg whites or 1/4 c egg beaters [or egg sub. equiv]
  • 2 tb Nonfat dry milk powder
  • 1/3 c Applesauce
  • 2 ts Baking powder

Directions
  • Step #1 Spray loaf pan with Pam or ?.
  • Step #2 Open pineapple & drain off juice mix dry ingredients together in large bowl.
  • Step #3 In mixer, add apricots & raisins, egg, process together applesauce, bananas & pineapple add to dry mixture, beat just till well mixed.
  • Step #4 Turn into loaf pan, baked in preheated 350F oven for 60 mins or until golden & tests done.
  • Step #5 remove this from pan & rest on a board or rack on its side till completely cooled.
  • Step #6 put in the fridge wrapped.
  • Step #7 Freezes well.
  • Step #8 Now for the variables, I have made this with no apricots but with one fresh apple, sliced ( not peeled).
  • Step #9 I have made this with & without raisins.
  • Step #10 Less sweet but good both ways.
  • Step #11 I am eager to try it with fresh bluberries in place of the apricots.
  • Step #12 I have also made it without the pineapple because I forgot to buy some, instead I used 1 c apple juice.
  • Step #13 If you don't have the soy flour or the dry milk, just add the equivilent of flour or oat bran or??.
