California Vegetable Pizza Recipe

Ingredients
  • 1 c Onion,sliced
  • 2 Turkey thighs,2#ea
  • 6 tb Butter or margarine
  • 1/3 c Sherry,dry
  • 1 1/2 ts Garlic salt
  • 1/4 ts White pepper

Directions
  • Step #1 1.
  • Step #2 Have butcher bone turkey, or do this yourself by using a small, thin-bladed, sharp knife.
  • Step #3 Slit meat along length of bone; pull meat apart, exposing bone.
  • Step #4 Continue cutting meat away from bone, being careful not to cut meat in half; flatten.
  • Step #5  2.
  • Step #6 Spice up turkey with garlic salt & pepper.

  • Step #8 Place 1/2 c onion on each boned thigh; dot each with 1 tbsp butter.
  • Step #9  4.
  • Step #10 Fold meat over to enclose onion; tie securely with string to make 2 small bundles.
  • Step #11  5.
  • Step #12 Melt remaining butter; brown meat in butter on all sides over moderate heat.
  • Step #13  6.
  • Step #14 Add sherry; cover & bake in preheated 325'F.
  • Step #15 oven 1 1/2 hrs, or until meat is tender.
  • Step #16  7.
  • Step #17 Skim any excess fat from pan sauce; serve sauce au naturel or thicken slightly if desired.
