Cambell's Mock Hollandaise Recipe

Ingredients
  • Sea salt,, to taste
  • 1 tb Paprika
  • 1 c White vinegar
  • 1 Head Romaine lettuce leaves
  • 2 sm Onions,, thinly sliced
  • Freshly ground black pepper,, to taste
  • 4 Jalapeno chiles,, sliced in disks
  • 2 Bay leaves
  • 16 Green olives,, sliced
  • 1 ts Cumin
  • 4 Cloves garlic,, smashed
  • 1/4 ts Ground nutmeg
  • 8 Radishes,, sliced
  • 1 lb Fresh shrimp, peeled and deveined
  • 1/3 c Olive oil

Directions
  • Step #1 Saute the shrimp, a few at a time, in a little of the olive oil until lightly brown, adding more oil as needed.
  • Step #2 place this in a covered dish or jar.
  • Step #3 In a saucepan, chiles, vinegar, onions, mix the remaining oil with the bay leaf, paprika, garlic, salt, nutmeg, cumin, & pepper to taste.
  • Step #4 Bring to a boil slowly & let simmer until the onions are tender, about 5 mins.
  • Step #5 Pour the vinegar mixture over the shrimp.
  • Step #6 Chill overnight.
  • Step #7 Serve on Romaine leaves, garnished with radishes & green olives.
  • Step #8 Yield: 4 to 6 servings.
