Canadian Corn Chowder Recipe

Ingredients
  • 1 Bay leaf
  • 4 Cloves, whole
  • 6 Celery sticks, sliced
  • 1 3/4 lb Beef
  • 1/2 ts Cinnamon
  • 2 Carrots, sliced
  • 2 lb Veal
  • Pie dough
  • 1 Patridge
  • 2 ts Savory
  • 1 ts Rosemary
  • 2 lb Pork, boneless
  • Pepper to taste
  • 1 Rabbit
  • 1 ts Nutmeg
  • 3 lg Onions, sliced
  • 6 oz White wine
  • 1 1/2 c Boiling water
  • 1 tb Salt
  • 1 3/4 lb Chicken

Directions
  • Step #1 Cube meats & place with onions (1/3 of quantity) in a 5 quart roasting pan.
  • Step #2 Add a layer of vegetables & spices, then cover first layer of meat & vegetables with pastry, cut openings in pastry for steam to escape.
  • Step #3 Continue layers in this matter twice more.
  • Step #4 Always finish your "Cipate" with a layer of dough.
  • Step #5 Pour wine & water in the dough incisions.
  • Step #6 Cover with a tight lid & cook for 4 hrs in a 300F oven & serve.
  • Step #7 This recipe is served at Christmas mainly in French speaking areas of Canada.
