Canadian Souffles Recipe

Ingredients
  • 1 lb Dried yellow peas
  • 1 tb Butter
  • 1 lb Salt pork
  • 1 tb Salt
  • 1 lg Onion, sliced
  • 1 ts Dried savory
  • Pepper to taste
  • 12 c Water

Directions
  • Step #1 Place peas in a colander; rinse under running water.
  • Step #2 Put peas in a large stockpot; cover with cold water & allow to soak overnight.
  • Step #3 (If using split peas, there's no need to presoak.
  • Step #4 ) Drain.
  • Step #5 In a large pot, melt the butter & saute onion until softened, about 2 mins.
  • Step #6 Add peas, salt pork, salt, water & savory.
  • Step #7 Bring to boil; cover & let simmer for about 1 1/2 hrs or unntil salt pork is tender.
  • Step #8 Remove pork; chop & turn to soup.
  • Step #9 Continue simmering soup until peas are tender, about 30 mins longer.
  • Step #10 Remove 2 c peas from soup & process in food processor/blender; stir back into the soup.
  • Step #11 Adjust Spice uping & serve.
