Directions
  • Step #1 Wash oranges, lemons, or grapefruit.
  • Step #2 Remove peel in 2 sections.
  • Step #3 Cut each section into 1/4-inch strips.
  • Step #4 Cover with cold water.
  • Step #5 Heat to boiling.
  • Step #6 Boil 10 mins.
  • Step #7 Drain.
  • Step #8 Repeat 3 times.
  • Step #9 Drain.
  • Step #10 Cover with boiling water & let simmer until tender.
  • Step #11 Drain.
  • Step #12 Divide peel into 3 portions.
  • Step #13 Prepare a heavy sirup, using 2 c sugar & 1 c water.
  • Step #14 Color 1 portion of sirup red, 1 portion green, & leave 1 portion clear.
  • Step #15 Add 1/3 of peel to each portion of sirup.
  • Step #16 There should be sufficient sirup to cover each portion of peel.
  • Step #17 Cook slowly until tender.
  • Step #18 Allow to stand in sirup overnight.
  • Step #19 Drain thoroughly.
  • Step #20 Roll in granulated sugar.
  • Step #21 Place on cake rack.
  • Step #22 Dry in very slow oven (250 F) until surface is firm.
