Candied Mint Leaves Recipe

Ingredients
  • 3 c sliced pecans
  • 1/2 ts Baking powder
  • 1 pn Salt
  • Powdered sugar
  • 1 c Sugar
  • 1 3/4 c Plus 3 tb, all-purpose flour
  • 1/3 c sliced candied orange peel
  • 5 Eggs
  • 2 c sliced candied pineapple
  • 1 c Butter, room temperature
  • 1 tb Lemon extract
  • 3/4 c sliced candied cherries
  • 1 tb Vanilla extract

Directions
  • Step #1 Position rack in lowest third of oven & preheat to 250 deg F.
  • Step #2 Grease & flour 12 c bundt pan or tube cake pan.
  • Step #3 In large bowl, mix pecans & fruits with 3 tb flour.
  • Step #4 In another large bowl, cream butter with sugar until light & fluffy.
  • Step #5 Beat in eggs 1 at a time.
  • Step #6 stir in the vanila & lemon extracts.
  • Step #7 Sift 1 3/4 c flour with baking powder & salt.
  • Step #8 Add dry ingredients to batter; stir until mixed.
  • Step #9 Mix fruit mixture into batter.
  • Step #10 Pout batter into prepared pan.
  • Step #11 bake this until golden brown & testr inserted into centre comes out clean, about 2 1/2 hrs.
  • Step #12 Cool in pan on rack 15 mins.
  • Step #13 Turn out onto rack & cool.
  • Step #14 (Can be prepare 2 weeks ahead; wrap in foil & store at about room temp.
  • Step #15 ) Dust with powdered sugar.
